Deep Dish Chocolate Eclairs

Crust:
½ cup butter
1 cup water
½ tsp salt
1 tsp. sugar
1 cup flour
4 eggs
Place the cold water, salt, sugar, and butter into a pan and set over a high heat. Bring to a rolling boil. Turn down the heat to medium and stir in the flour, beat vigorously with a wooden spoon. As soon as the mixture starts to come away from the side of the pan and forms a firm ball, stop beating and place into a mixing bowl. Let cool for a few minutes. With a paddle beater and mixer on low, beat in the eggs, one at a time, mixing well between each addition, until you have a smooth paste. Spread into 9 x 13 inch greased pan. Bake at 350- 375 F degrees for 30 minutes till golden brown. Cool completely



Filling:
2 boxes white chocolate or Vanilla Pudding reserving 2 Tbsp. for topping.
¼ cup sugar
1 tsp. vanilla
2 cups whole milk
1 cup heavy cream
18 oz. cream cheese

Beat cream cheese with beater bar on medium speed till smooth scraping the bowl down while mixing. Add the pudding and sugar and continue to beat. Switch to wire whisk and add cream, vanilla, and milk and whip till fluffy. Spread evenly on top of the cooled crust.

Topping :

8 oz. Heavy whipping cream
2 Tbsp pudding
1/3 cup powdered sugar

Using wire whisk, whip all ingredients till medium firm peaks form. Spread on top of filling. Drizzle with chocolate ganache. (1 cup chocolate chips ½ cup heavy cream 1 Tbsp. butter melted together) Refrigerate till served.
